Ho Ho Ho and Two Holiday Collections!

‘Tis the season to start nesting. I can tell with my cooking. (I made some totally bomb sweet potato home fries last night…I'll share the recipe at the bottom of the post). This time of year, I want to curl up under a blanket with a hot drink and read a good book.

Here's the recipe:
Trader Joe's pre-cut sweet potatoes (sure you can do it yourself, but Trader Joe's loves you and saves you the effort and the mess)
Onion (I buy the TJ pre-chopped. For same reasons as above)
Goat Cheese, crumbled
Salt, Pepper, Cinnamon, and Chili Powder

I made this for one, but you can up the recipe for the amount of people you'll be feeding. I had enough for two meals.

Put about 1/3 of the bag of sweet potatoes on a plate, and throw those babies in the microwave for 3 minutes. You can boil them, too, but for a smaller batch, this is way easier.

In a frying pan, melt butter and start cooking onions. Do not caramelize.

Add sweet potatoes. Add all seasoning except salt. Make sure to get butter all over the cubes.  Give them a chance to cook for a couple minutes before drawing the water out with the salt.

Add salt to taste. Let cook undisturbed on medium heat for 10 minutes. The potatoes will be soft on the inside and crunchy on the outside.

Add crumbled goat cheese and EAT!!! Your home fries will be sweet, spicy, savory, and creamy. Damn these were so good. I served with fried eggs and multi-grain toast.
